INSALTA DI RADICCHIO

Shaved pear, radicchio, witlof, watercress, fresh goats curd, vin’cotto

Serves 4

Ingredients

  • 1 large radicchio
  • 1 bunch watercress
  • 2 bunch witlof
  • ½ pear
  • 100gm goat curd
  • 30gm vin'cotto
  • 30gm E.V.O.O
  • Salt to taste

 

Method

  1. Cut bottom to remove white ends of radicchio and chop remaining leaves. Pick watercress and mix with radicchio.
  2. Thinly slice witlof and mix with radicchio. Wash salad mixture, drain and dry.
  3. Shave pear and add to bowl with vin'cotto and salt.
  4. To finish, add E.V.O.O and sprinkle with goat curd.
