Although there are a few different types of truffles on the market today, Chef Paolo's preferred truffle choice are the "diamonds of the kitchen" - black truffles. Either cooked in a recipe or shaved on top, in the Sarti kitchen this is the perfect earthy ingredient to complement his daily specials.
